A recipe from Nithbank Garrocher Tea Infused Scones

This recipe has become a favourite with guests at Nithbank: it uses tea grown at our local Garrochar Tea Garden at Creetown to infuse the scone with a full flavour. Melanie says: “It is a fabulous tea, with a rich amber colour and a fresh taste.”

Garrocher Tea Infused Scones

Ingredients: for 8-10 small scones

250g strong white flour
40g butter
1 egg
70ml strong Garrocher tea
40g caster sugar
2tsp baking powder
40g sultanas
Whole milk to bring together

Method
Soak sultanas in tea overnight
Sieve together all your dry ingredients. Add in your butter and rub into the flour mix.
Add egg, tea and sultanas. Bring together with a fork adding enough milk to form a soft dough.
On a floured surface, roll out gently to around an inch thickness. Cut with the dough cutter of your choice.
Place on a non-stick baking tray and bake for around 20 minutes at 190c/170 fan/gas mark 5.

We serve with lashings of our homemade jam and cream. Enjoy – they are simply delicious!
